How do I quote 1 post out of many?

Question 
When I press "reply" it copies the post with all the other quotes in it, but I see many posters who copy just one quote by itself without the older quotes. How do they do this?

Press the reply button like you normally do, click the "view source" icon (last icon in the second line) and delete the extra quotes from there.  

Each quote has the code [ quote ] before it and [/ quote] after it, so delete those and the text between them.
